After the specialty grains have steeped for the required amount of time they are removed, and the malt extracts and sugars (if any) are added. The water is topped up to about 3 gallons and the mixture, now called 'wort' is brought to a boil. This process must be carefully watched as it is very easy to have a boilover, resulting in a sticky mess all over the stove!
