Once the temperature reaches 155°F, the grains are steeped in their bags, usually for 30 minutes. A careful eye is kept on the temperature during this time, and the heat adjusted as necessary. The bags are dunked and stirred around the pot from time to time to ensure that as much flavor as possible is extracted from the grains.
