A lid is sealed onto the fermenting bucket, and an air-lock inserted into a hole in the lid. This device allows the carbon dioxide produced from the fermentation process to escape whilst not allowing any 'nasties' to get into the fermenting beer. The beer is kept at a constant temperature - ideally between about 65-70°F for ales - to ferment.
